Our members make the most delicious dishes.  Some have contributed their amazing recipes below.


  • Biscotti - contributed by Cathy Holland & BeBe Ferrari
    • MIX
      1 1/2 sticks of butter
      2 1/2 Cups sugar
      4 eggs
      2 teaspoons vanilla
      1/4 cup milk
      2 or more shots bourbon
      (5-6 cups flour)
    • Add in:
      dash of salt
      2 teaspoons baking powder
      1 teaspoon anise seed
      1 cup slivered almonds
    • Directions ( Preheat oven to 350 degrees)
      Add 1 cup of flour at a time. Knead the floured board, roll in stripes. Place on an ungreased cookie sheet. Bake at 350 degrees until rolls are light brown.  Cut stripes diagonally into cookies and bake 5 minutes on each side at 400 degrees.

      The biscotti taste excellent. Everyone has complimented Cathy & BeBe on the cookies. This is a winner!  FF
       
  • Meatballs - Summer 2005 Meatball Contest Winner!
    • The following is Charlie’s (Keller) winning recipe:
      For 50 meatballs, you will need 4 lbs. of lean chopped meat
      12 cloves of minced garlic
      2 cups of minced parsley
      1 cup grated parmesan cheese
      1 1/2 cups Italian style breadcrumbs
      4 eggs
      Dash salt & pepper
      Mix well and form into golf ball size meatballs.  Preheat oven to 450 degrees.  Spray baking pan with Pam or use light cooking oil.  Arrange meatballs in single layer in baking pan.  Bake at 450 degrees for 15 minutes.  Turn and continue baking for approximately 15 minutes.  Taste one to see if done.  When done, drain on a paper towel and then drop them into the sauce.  Mangiare!
       

       

  • Pasta in Vodka Sauce - by Minnie Sinard ( Nicla Boston )
    • One small onion, one stalk of celery, one medium carrot, two cans of Del Monte chunky tomatoes pasta style( you'll find it at Foodland). 1/2 cup of vodka, one container of panna da cucina (can't find it on Maui, so use a small container of whipping cream).

       
      Finely chop all the vegetables. Sautee in about 2-3 tablespoon of olive oil, add the tomatoes, add salt and pepper simmer for about 30 minutes.  In the meantime bring a pot of water to a boil.  Pour in the pasta( farfalle or bow tie is the best). When sauce is ready add the vodka, cook - for a minute or two - add the panna, heat it thru.  Drain the pasta pour it in the pan with the sauce mix and serve .
      Buon appetito and Mangia che ti fa bene (Eat that's good for you ) !

       

    • Granita di Limone - By Corinne Gilmore
      • 3 cups water
      • 2 cups sugar
      • 1 1/4 cups strained fresh lemon juice
      • 2 t.grated lemon rind
      • Put water and sugar into a large sauce pan, place over medium heat and stir until sugar is completely dissolved. When water begins to boil, boil for exactly 5 minutes. Cool, then add lemon juice and rind. Pour into a 9x9x2" cake pan and place in freezer.  Stir the mixture with a fork, scraping sides of the pan as you stir, every 20 minutes or so to produce a soft-grained ice. Allow 4 hours time before serving. Spoon into sherbet glasses. Serves 6.
